A deeply browned crust, juicy beef, melted cheddar, sweet caramelized onions and a creamy sauce that is subtly smoky and tangy. A Smash Burger may seem simple, but the difference between an ordinary burger and one resembling those served in American burger joints lies in the technique.

The secret is not to shape a thick patty. Place the meat in a ball directly on a very hot cooking surface and press it down firmly in the first few seconds. Maximum contact with the pan creates the famous brown, crisp crust through the Maillard reaction.

Below is a complete recipe for a Double Smash Burger with caramelized onions and secret sauce, which you can make at home without professional equipment.

Ingredients for 4 Smash Burgers

For the beef

  • 800 g ground beef
  • approximately 20% fat
  • salt
  • freshly ground black pepper
  • 8 slices American cheese or burger cheddar

Ideally, use a beef blend with at least 15–20% fat. Very lean meat dries out quickly and does not provide the texture typical of a Smash Burger.

For the caramelized onions

  • 3 large yellow onions
  • 25 g butter
  • 1 tbsp oil
  • 1 tsp brown sugar, optional
  • 1 tbsp balsamic vinegar
  • a pinch of salt

For the secret sauce

  • 120 g mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp American mustard
  • 1 tbsp very finely chopped pickles
  • 1 tsp pickle brine
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • a few drops of Worcestershire sauce
  • optional: ½ tsp hot sauce

For assembly

  • 4 brioche burger buns
  • sliced pickles
  • iceberg lettuce, optional
  • butter, for toasting the buns

How to make the secret Smash Burger sauce

In a small bowl, mix the mayonnaise, ketchup and mustard.

Add the very finely chopped pickles, a little pickle brine, smoked paprika, garlic powder, onion powder and Worcestershire sauce.

Mix until you have a smooth sauce.

For a better result, cover the bowl and leave the sauce in the refrigerator for at least 30 minutes. The flavours will become much more balanced.

The sauce should be creamy, mildly sweet, tangy, subtly smoky and slightly salty all at once.

How to caramelize onions properly

Slice the onions thinly.

Put the butter and oil in a pan over medium-low heat. Add the onions and a pinch of salt.

Cook slowly for approximately 25–35 minutes, stirring occasionally.

Do not try to speed up the process by using very high heat. The onions need to release their natural sugars and gradually turn golden, soft and sweet.

Towards the end, you can add a teaspoon of brown sugar.

Add the balsamic vinegar and cook for another 1–2 minutes.

The result should be onions that are very soft, golden-brown and almost creamy.

Preparing the beef

Divide the 800 g of beef into 8 portions of approximately 100 g.

Shape them into balls without compacting the meat too much.

Important: do not knead or press the meat before cooking.

The airier its structure remains, the better the final texture will be.

Keep the balls in the refrigerator until it is time to cook them.

The secret to a perfect crust

For an authentic Smash Burger, you need a surface capable of holding a great deal of heat.

The best options are:

  • a cast-iron skillet;
  • a cast-iron griddle;
  • a plancha;
  • a carbon-steel griddle.

Heat the surface thoroughly.

Place a ball of meat on the dry pan and leave it for approximately 5–10 seconds.

Place a piece of parchment paper over it and press extremely firmly with a sturdy spatula or a burger press.

You should end up with a very thin patty.

How long should the meat be pressed?

Approximately 10 seconds is enough.

Once the crust has formed, do not press the burger again.

If you press it while it is cooking, you will force the juices out of the meat and the burger will become drier.

Cooking the Smash Burger

After pressing the meat, season its surface with salt and pepper.

Leave it for approximately 60–90 seconds, without moving it.

The edges will become deeply browned and slightly crisp.

Using a rigid metal spatula, scrape the patty from the pan so that you retain the crust that has formed.

Flip the burger.

Immediately place a slice of cheddar on top.

Cook for another approximately 30–60 seconds.

Use two patties for each finished burger.

Stack one on top of the other, and the cheddar between them will begin to melt.

Why you should not overcook the beef

A Smash patty is very thin.

For this reason, the difference between a perfect crust and overly dry meat can be only a few tens of seconds.

The aim is to achieve:

a deeply browned crust on the outside + an interior that is still juicy.

Toast the buns

Cut the brioche buns in half.

Lightly butter the cut sides.

Place them on the griddle for approximately 30–60 seconds, until golden.

This step is not just for flavour.

The toasted surface also forms a barrier that prevents the sauce from quickly soaking into and softening the bread.

How to assemble the Smash Burger

The order of the ingredients matters.

Place the following on the bottom half of the bun:

  1. a generous layer of secret sauce;
  2. a few pickle slices;
  3. the first cheddar-topped patty;
  4. the second cheddar-topped patty;
  5. caramelized onions;
  6. a little more sauce;
  7. the top half of the bun.

Optionally, add a little iceberg lettuce for contrast and texture.

The restaurant trick: Double Smash

For this recipe, a combination of two thin 90–100 g patties is better than one 180–200 g patty.

Why?

Because two patties mean almost twice as much browned surface area.

And for a Smash Burger, this intense crust is precisely the main source of flavour.

Which cheddar is best?

For the classic American style, American cheese slices are difficult to replace because they melt extremely evenly.

You can also use:

  • mature cheddar;
  • red cheddar;
  • Monterey Jack;
  • Pepper Jack, if you want a mildly spicy burger.

For the texture typical of American restaurants, cheddar made specifically for burgers remains the simplest choice.

Oklahoma Smash Burger variation

You can turn this recipe into a famous Oklahoma Onion Burger.

Instead of caramelizing all the onions separately, slice one onion extremely thinly and place a small amount directly on top of the meat ball before pressing it.

Press the meat and onion at the same time.

The onion cooks in the fat from the meat, while its edges caramelize directly into the crust.

The result has a spectacular flavour.

What potatoes go with a Smash Burger?

The most suitable side dishes are:

  • very thin French fries;
  • potato wedges;
  • potatoes with Parmesan and garlic;
  • sweet potato fries;
  • onion rings;
  • coleslaw.

If you want the full American diner experience, serve the burger with very crisp fries, pickles and extra sauce on the side.

The most common mistakes

Using beef that is too lean

The burger becomes dry. Choose meat with approximately 20% fat.

The pan is not hot enough

The meat starts to boil in its own juices instead of forming a crust.

Shaping the patty before cooking

You will no longer achieve the same aggressive contact between the meat and the hot surface.

Pressing the burger constantly

Pressing should be done only at the beginning.

Using too much meat

For a Double Smash, patties of approximately 90–100 g are enough.

Flipping the burger too early

Wait until the first side develops a pronounced brown crust.

Approximate nutritional values

For one complete Double Smash Burger:

  • Calories: approximately 850–1,000 kcal
  • Protein: 45–55 g
  • Carbohydrates: 40–50 g
  • Fat: 55–65 g
  • Fibre: approximately 2–4 g

The values vary depending on the fat percentage of the beef, the quantity of sauce and cheddar, and the size of the bun.

Can you prepare the ingredients ahead of time?

Yes.

The secret sauce can be made 1–2 days in advance and kept in the refrigerator.

The caramelized onions can be prepared ahead and gently reheated before serving.

However, the meat should be portioned and cooked as close to serving time as possible.

A Smash Burger is best immediately after it comes off the griddle, while the crust is still crisp and the cheddar fully melted.

An outstanding Smash Burger does not need complicated ingredients. It needs beef with enough fat, a very hot surface, firm pressing at the start and a very short cooking time.

Add melted cheddar, caramelized onions, pickles and the creamy sauce above, and you can make an American-style Double Smash Burger at home, with a crisp crust and juicy interior, very close to what you would find at a specialist burger restaurant.
